What do low-carbers miss the most? I think it’s fairly safe to say that it’s bread. I’m not a die hard low-carber, I still eat bread, pasta, rice etc., but in great moderation. I do try to cut back on carbs where ever possible. But bread… I’ve tried a lot of recipes. Some were all right, most I would not like to call bread. So eggy, it resembles more of a baked omelet than bread.
But… many many recipes later, I think I’ve managed to bake a low carb bread that I actually like. And not only me, the kids seem to like it as well. If that is not a sure sign, I don’t know what is… HALLELUJAH!
Added bonus: it’s really easy to make. Hard part is to wait till it’s fully baked and cooled enough to cut off a slice…
Just add all ingredients to a large bowl and mix well. Pour the batter into a loaf pan, lined with parchment paper. Sprinkle with some seeds (optional). Bake in the middle of the oven at 170 degrees Celsius, for about 1 hour and 15 minutes.
Out comes this delicious bread (it does sink in a bit once it’s cooled).
Very tasty and with a very acceptable texture. Really nice with some cucumber and cottage cheese, or anything else you might fancy.

Preheat oven to 170 degrees Celsius. Mix all ingredients in a large bowl. Pour batter in a loaf pan, lined with with parchment paper. Let rest for about 15 minutes. Then bake in the middle of the oven for about 1 hour and 15 minutes. Let cool in the pan for 30 minutes, then transfer to a wire rack to cool completely.

November 2, 2019Hoi Ida, chiazaad is niet per sé noodzakelijk in het recept. Je zou iets meer lijnzaad kunnen toevoegen en/of een extra lepel amandelmeel, maar ook zonder zou het prima moeten lukken.
