BBQ-time!

It’s summer and that means BBQ-time! Well, at least if the weather is playing along. Our summers around here are often wet and temperatures are not always what they are supposed to be during summer time. Which means that we have to seize every opportunity we can to enjoy warm and sunny days and eat outside.

I can enjoy any meal outside, if the temps are right. Breakfast, lunch, dinner. The best meals outside of course are barbecued ones. I love the smell and the food tastes so much better when grilled on the barbie. During our last heat wave, we enjoyed many moments outside. And we fired up the BBQ.

Easy Chicken Skewers

You can buy loads of great tasting ready-to-grill foods from the store. It’s easy, fast and no mess at home. And if you’re deciding last minute to barbecue, it’s a life saver. Though as good as most of the pre-marinated BBQ-food is, homemade still is the best. And you get to choose what goes into it. If you do have the time, it is worth the extra effort to prep your own BBQ-food. And these chicken skewers are easy to prepare and so darn delicious.

This recipe will feed a crowd, but you can easily half the recipe. I used:

1 kg of chicken breast

1 zucchini

250g (wild) mushrooms

1 red bell pepper

1 red onion

Cut chicken and vegetables into roughly same-sized pieces. Then mix all ingredients for the marinade together:

100 ml olive oil

50 ml freshly squeezed lemon juice

2 cloves of garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

1 tsp dried oregano

1 tsp salt

1/2 tsp pepper

Marinade

Then take two zip lock bags and fill one with the chicken pieces and one with the vegetables.

Pour 2/3 of the marinade into the bag with the chicken and 1/3 into the bag with vegetables.

Press as much air out as possible and close the bags. Kneed the bags to distribute the marinade evenly.

Put the bags in the refrigerator and marinate for at least two hours. If possible, let marinate for 6-8 hours or overnight.

All you have to do then, is assemble your skewers. Start with a piece of chicken, then alternately add vegetables, chicken etc. I used long metal skewers, but you can use any size or material. If you are using wooden skewers, make sure to soak them in water first, so they are less likely to go up in flames on the BBQ ;-).

Chicken Skewers

I got about 14 skewers, but how much you’ll get exactly depends of course on the size of your skewers, the size of the individual pieces and how much chicken/vegetables you manage to get on one skewer.

Now get them grilling on the BBQ. Or, if you don’t have a BBQ or the weather causes a change of plans, roast them in the oven/on a griddle.

  7. Assemble the skewers: start with a piece of chicken, then alternately add vegetables, chicken etc.

  8. Grill on the BBQ, a griddle or roast in the oven. Cooking times vary depending on the size of the chicken and vegetables (20 minutes on average, make sure the chicken pieces are cooked through).

    Dit lijkt me echt een heerlijk en gemakkelijk recept. ik ga hen bewaren want binnenkort zal hij vast weer aan gaan!

      Marinade is ook lekker met varkensvlees of garnalen. Laten we hopen dat we nog veel BBQ-dagen krijgen deze zomer 🙂

    Wat heerlijk en wat goed om het gewoon even overnacht te laten marineren. Laat de zon maar snel eer komen, dan leg ik dit op de barbecue!
