Star Wars Lemon Cream Cheese Cookies

Star Wars Cookies? For real? Yes, for real.

That’s kind of the short version of my conversation with the boys when I showed them what I had made. Their eyes almost popped out of their heads when they saw them. Followed by questions and remarks in the range of ‘are these Star Wars Cookies?’, ‘are they edible?’, ‘are those real cookies?’, ‘can we have these cookies?’, ‘are they really for us?’, ‘wow, how did you do that?’, ‘you really made these yourself?’, ‘WOW’, ‘COOL’, etc. And now imagine two excited boys jumping up and down, talking simultaneously, that my ears started ringing. Get the picture?

One of the questions they also asked was ‘why did you make these cookies?’. Kids being kids, they ask this question a lot. Why are we doing certain things, how does something work. Very common questions any parent probably can relate to. And of course the ‘why’ question was asked now as well. So… why? Because… it’s this weeks Crea Cross Challenge and I have the honor to co-host together with the creative mastermind behind the challenge, Ilse. Sci-Fi apparently isn’t a very obvious choice and before the start of the challenge, there were no volunteers for this prompt. So I volunteered. Oh, boy, what had I done? Luckily, I had about half a year to think about how I would interpret this prompt in a recipe. For a while, I was thinking about Sci-Fi themed cakes or cupcakes. Buttercream and sugar paste creations. Along the way though, I was getting a bit worried that I would not come up with anything concrete. Months flew past.

The idea

I was already contemplating a Star Wars theme. And when I saw these engraved rolling pins, I just knew it. I finally had an idea. Star Wars Cookies! Last year, I had seen these awesome rolling pins with skulls engraved in them. Once I started googling, I found so many more designs. One of them being Star Wars. I found a shop on Etsy and I could not resist to order a ‘few’ more (5 in total, uhum). So excited when I got them in my mail!

I could have used my recipe for cut-out-cookies, but I thought I might share a new recipe: Lemon Cream Cheese Cookies.

Very delicate lemon flavor, tender texture. Really delicious cookies. The dough is very soft, even after a couple of hours in the fridge, so it’s a bit hard to use the dough for cut-out-cookies. You could also just scoop out the dough and drop it on a baking sheet. But I wanted to use this recipe for my Star Wars Cookies. It definitely was worth the extra hassle. If you want an easy dough to work with, just use this one.

For these utterly delicious and oh so cute Sci-Fi Star Wars Cookies, you’ll have to beat 500g softened unsalted butter with 200g softened cream cheese. Add 450g of white sugar and beat (on medium speed) until fairly fluffy.

Then add 2 egg yolks, 2 tsp lemon extract and 1/2 tsp salt en beat well. Add 900g of plain flour and beat until combined.

The dough will be very soft. Chill for at least 1.5-2 hours. Scoop out a good portion of dough and place on a floured surface. Dust with extra flour and roll out dough with a regular rolling pin (about 1cm). Dust again and, using the engraved rolling pin, roll once over dough, pressing down lightly. The dough will now be ca. 0,5cm think and the pattern will be engraved in the dough.

Cut out circles and place on prepared baking sheet.

Bake ca. 10-12 minutes. Take out of the oven and place carefully on a wire rack to cool. Now this recipe makes 80-120 cookies, depending on the size of the cookies of course. It’s one of those recipes that render enough to share with a whole bunch of people. And we love to share. If this is bit too much for the occasion, simply half the recipe.

Star Wars Lemon Cream Cheese Cookies

Servings 100 cookies

Ingredients

  • 500 g unsalted butter, softened
  • 200 g cream cheese, softened
  • 450 g sugar
  • 2 egg yolks
  • 2 tsp lemon extract
  • 1/2 tsp salt
  • 900 g plain flour

Instructions

  1. Beat together the butter and cream cheese.

  2. Add sugar and beat until fairly light and fluffy.

  3. Keep beating with medium speed and add the egg yolks, lemon extract and salt. Mix until well combined.

  4. Beating on low speed, slowly add flour. Mix until the flour is incorporated. The dough will be very soft.

  5. Chill for at least 1,5-2 hours.
  6. Preheat oven to 160°C and line a baking sheet with parchment paper.

  7. Scoop out a good portion of dough and place on a floured surface. Dust with extra flour and roll out dough (about 1cm). Dust again and, using the engraved rolling pin, roll once over dough, pressing down lightly. The dough will now be ca. 0,5cm think and the pattern will be engraved in the dough.

  8. Cut out circles and place on prepared baking sheet.

  9. Bake ca. 10-12 minutes.

  10. Take out of the oven and place carefully on a wire rack to cool.

Recipe Notes

This makes 80-120 cookies, depending on the size of the cookies. You can half the recipe.

    Wat een superleuke koekjes zeg! Ze zijn echt heel duidelijk herkenbaar als Star Wars koekjes. Grappig!

    Heel erg gaaf! Waarschijnlijk heb je ook wel iets zachter deeg nodig om de figuurtjes er mooi in te krijgen. Ik vroeg met altijd af of zo’n roller echt zou werken. Leuk dat het resultaat echt zo strak wordt!

      Was er ook wel bang voor, maar werkt toch best goed. Wel een aantal technieken geprobeerd. Als je te langzaam rolt (wat ik dus eerst deed), dan blijft het deeg plakken. Snel rollen is de boodschap. En ook niet heen en weer, dan gaat het heel goed 🙂

    Oh, wauw! Ik wil ook zo’n deegroller! Alleen dan niet met star wars, Mickey en Minnie lijkt me wel wat.. 🙂

      Zo leuk, hè. Mickey en Minnie had ik nu niet gezien, maar ze maken ook gepersonaliseerde rollers, dus wellicht kun je ook zoiets laten maken.

    Wow wow wow… ik wil die deegroller ook!! Al is het alleen al om er naar te kijken, De nerd in mij word er helemaal blij van. Heb je hem in Nederland kunnen laten maken of een buitenlandse order geplaatst bij Etsy. Ik vind hem super tof En die koekjes? Ik zou ook zo reageren hoor. En dan ben ik 39 😛

      Je had mijn vreugdedansje moeten zien toen ik de eerste batch uit de oven haalde. 40+ en zo blij als een kind ;-). Er zijn veel aanbieders uit Ukraine en zo. Dit was er een uit Litouwen, dus in ieder geval EU, zit je niet met inklaren en dergelijke. Kwam netjes verpakt met de post, heel goede service. Er stond 8-15 werkdagen op, ik had ze netjes na 8 dagen binnen. Héél blij mee 🙂

    Wat geweldig dit! Zou ik nou nooit opkomen om koekjes te maken met zo’n deegroller. Echt heel gaaf! En ze lijken me nog lekker ook. Misschien toch maar eens mijzelf tot bakken zetten.

      Dank je wel! De koekjes zijn echt héél lekker. En om het makkelijk te maken, kun je ook gewoon met een lepel hoopjes deeg op de bakplaat doen.
