Roasted Apricot Puree

Apricots – the season for this summer stone fruit is in full swing. They are juicy and full of flavor. Funny enough though, I don’t like them fresh that much. While I prefer most fruits and vegetables fresh over the canned ones, I do like canned apricots better. And I like them dried. Both not the best options when it comes to sugar, of course. The canned apricots are happily soaking in sugar syrup and the dried ones are (just like any dried fruit) little sugar bombs. So I try to avoid both (not always succeeding).

But… there is one thing I’m really totally nuts about. And that’s roasted apricot puree. The flavor is so incredibly intense, your taste buds will go wild. And it’s so easy to make!

Preheat your oven to 150°C and line a baking sheet with parchment paper.

Cut 1 kg of fresh apricots in half and remove the stones.

Lay them cut side up on the prepared baking sheet.

Roast in the middle of the oven for 1,5 – 2 hours.

Remove from oven and let cool completely.

Now you can eat the roasted apricots as is. They are now incredibly juicy and taste out of this world delicious. You can store them in the fridge for a couple of days. I like to blend them into a silken smooth apricot puree. Just put the whole bunch in a blender or food processor and blend until it reaches the desired consistency.

Now I just add the tiniest bit of sweetener to it, I like it quite tart. A lot depends of course on the sweetness of the apricots and your own taste. So first taste the unsweetened puree, then slowly add sugar or sweetener until you’re happy with the sweetness.

This roasted apricot puree is so good on almost anything. Mix it into Greek yogurt, slather it on a buttered sandwich, swirl it through your (cheese) cake batter… It never lasts long in our house.

Ingredients

  • 1 kg fresh apricots
  • Sugar/sweetener to taste*

Instructions

  1. Preheat your oven to 150°C and line a baking sheet with parchment paper.
  2. Cut the apricots in half and remove the stones.

  6. Put cooled apricots in a blender or food processor and blend until the puree reaches the desired consistency.

  7. Add sugar or sweetener to taste.*

*Taste the puree before adding any sugar or sweetener. Then slowly add to suit you taste.
