There is so much you can do with soft tortilla’s. They are so extremely versatile. One of the easiest and quickest ways to use tortilla’s is making wraps. You can fill them with basically anything! Just put all the fillings you like on them, roll ‘m up and serve. Also very portable, which makes them ideal to take to school, work, on a trip etc.
Now that’s cold wraps. How about warm wraps? Fill them with minced beef, pork, chicken or turkey, pulled pork or chicken, sliced steak. Add fillings and toppings and you have a mighty dinner ready in no time. Then there’s fajita’s, enchilada’s, taquito’s, top and grill them like a pizza…
Well, I think you’re getting my point. So many different dishes with this one simple ingredient. But wait, there’s one more… tortilla pie! Yep, that’s right, tortilla PIE. Easy as hell, heavenly delicious. Again, an absolute winner in our house!
No need to elaborate any further, here’s the recipe. Enjoy!

Tortilla Pie
Ingredients
- 5 tortilla's*
- 500 g ground pork/beef mixture**
- 2 red onions (thinly sliced)
- 1 red bell pepper (thinly sliced)
- 1 yellow bell pepper (thinly sliced)
- 1 green bell pepper (thinly sliced)
- 2 tbsp taco seasoning
- 400 g grated cheese***
- Bit of olive oil
Instructions

Preheat oven to 180°C and line the bottom of a spring form with parchment paper and grease the sides.

Heat a bit of olive oil in a frying pan or wok and brown the ground beef/pork mixture. Add the taco seasoning and stir well.

Add the onions and peppers.

Stir-fry until the onion softens. Taste and add more seasoning to taste if needed.

Place 1 tortilla on the bottom of the spring form.

Then spread 1/4 of the meat mixture on top.

Sprinkle 1/5 of the cheese on top of the meat.

Then top with second tortilla and press firmly down.

Then repeat the layers.

End with the last tortilla and top with the remaining cheese.

Bake for about 20 minutes or until cheese has turned golden brown.

Serve with a fresh salad, sour cream, sliced avocado and your favorite (hot) sauce.
Recipe Notes
*I used carrot tortilla's from 'No Fairytales', which is our favorite, but any tortilla will do.
**You can use also ground beef, chicken or turkey.
***I used a mixture of mozzarella, Emmenthal and Gouda, but any well melting cheese will work fine.
