Classic Banana Bread

Klassiek Bananenbrood

Classic banana bread

Alright, I know it’s been way too hot the past weeks to even think about turning on the oven. But if you don’t mind or it’s not as hot where you live, I got this wonderful recipe for you: classic banana bread.

Cookbook review

Just recently, I reviewed a new cookbook, called ‘Bananenboek’, the banana book. Unfortunately, it’s only on Dutch. As the title already says, it’s a cookbook all about the banana. Banana a s ingredient for sweet AND savory dishes. Quite interesting. So, for the review, I tried several recipes form the book, but I didn’t try any of the baking recipes. Why? I already have about 15 different banana recipes on my blog and there are still more to come. And then I suddenly realised that there is still one important recipe missing: one for good, old fashioned, plain banana bread. read more

Artisan Bread – the ‘no knead’ method

Artisanaal Brood - de 'no knead' methode

Artisan bread

Spring has finally arrived. More than that, we’ve reached summery this week! If you’re walking outside around dinner time, you can’t escape the smell of BBQ’s all around the area. We’re not huge BBQ-fans, but we love to eat outside. And with these warm temps, we like to move into the garden. We might fire up the BBQ this weekend, or we might settle for a quick and light meal. What I love in both cases?  Freshly baked bread on the side. read more

Halloween Treats

Halloween Treats

Tomorrow is Halloween night. Whether you celebrate it or not, it’s hard to ignore all the Halloween-accessories, costumes and candy that’s available in the stores. Now that it’s almost Halloween night, they sell everything at high discounts, as they won’t be able to sell anything after the 31st. Very tempting to buy all that stuff. But you can also make cute Halloween treats yourself. If you’re looking for some last-minute inspiration, I have a few nice ideas for you. read more

Nectarine Cinnamon Bread Pudding

Neactarine Cinnamon Bread Pudding

Have you ever made Bread Pudding before? It’s a perfect way to use up stale bread and I can’t believe I have never tried it. This recipe is one of those that are the result of throwing together some ingredients that need to be used before you have to throw them out. Another recipe that I came up with during our holiday at the farm.

Using up ingredients

I had a whole baguette left from a barbecue two days earlier. Too dry and too hard to eat it like that. There is a lot you can do with a stale baguette: read more

Chai Spiced Banana Bread

Chai Banana Bread

Chai Spiced Banana Bread. I know that many will associate chai with hot drinks, like a Chai Latte. Chai. Comforting, warming spices. Not something you might expect in the middle of summer. But believe me, this is good. Those who follow me for a little while now, know that I use a lot of banana’s in baking. It started out as a necessity to use up overripe banana’s, but it has started to become a regular item in my baking and cooking adventures. Bread, cookies, bars, drinks, desserts, even waffles. Banana’s are quite versatile and due to their natural sweetness (the riper, the sweeter), you’ll need less sugar or sweetener in your recipe. read more

Greek Yogurt Soda Bread

Greek Yogurt Soda Bread

Love fresh bread, but hate the kneading and long waiting? Or are you like me, simply forgetting that you wanted to bake bread and realize just an hour before lunch that there is no fresh bread in the house? Then soda bread is perfect for you. I really don’t hate the kneading, it can actually be very soothing and relaxing to work a yeast dough for 10 minutes. And the waiting time can be filled with other activities. And I love the yeasty smell of rising dough! read more

Healthier Banana Bread

Healthy Banana Bread

This truly is the BEST healthy banana bread out there! Gluten free, no oil/butter, no (refined) sugar!

Gosh, I have tried so many banana bread recipes, I can’t even count them. Some were too dry, most of them were too ‘banana’, too dense/moist/mushy, overly sweet, wouldn’t rise… There is one banana bread though, that is the BEST banana bread, if you don’t mind using sugar, regular flour etc, and it’s this banana bread by Nikki from Chef In Training. This is serious business, if it comes to banana breads. I will gladly make this one again. And again. And again. read more

Low Carb Bread

Koolhydraatarm brood

Koolhydraatarm brood yoghurt kaas titel

What do low-carbers miss the most? I think it’s fairly safe to say that it’s bread. I’m not a die hard low-carber, I still eat bread, pasta, rice etc., but in great moderation. I do try to cut back on carbs where ever possible. But bread… I’ve tried a lot of recipes. Some were all right, most I would not like to call bread. So eggy, it resembles more of a baked omelet than bread. read more
