Spaghetti squash is still fairly unknown around here. But since one of the largest grocery stores in the Netherlands has started selling it and explained in monthly magazine what it is, the word is getting out and recipes are popping up everywhere. I’m really glad about it, as I don’t have to drive through half the country anymore to get a spaghetti squash.

It’s a fun and versatile vegetable and perfect if you want to cut down on your carb intake. It is a delicious sub for spaghetti (obviously), but you can use it in other dishes as well, where you would normally use pasta, rice or potatoes. I posted this Spaghetti Squash Casserole last year, which is actually based on a pie recipe (like a Shepherd’s pie). read more

Banana Hazelnut Snack Cake

Banana recipe #… I know, another banana recipe. And guess what, I still have a bunch of recipes I want to share with you. So stay tuned if you like banana bread and similar recipes. This recipe is really different from all the other recipes. Why? Because it’s made with ground hazelnuts.

Gluten & sugar free

As I’ve used ground hazelnuts instead of flour, it’s gluten free and fairly low-carb. Fairly low-carb as it doesn’t have any flour, but probably still too carby for those on a strict low-carb diet, due to the banana. But low-carb or not, this cake is definitely worth a try. It tastes amazing and is super light and fluffy (due to beaten egg whites added to the batter). And, I did not use any added sugar or sweetener. The bananas and the ground hazelnuts are sweet enough together. read more

Apricots – the season for this summer stone fruit is in full swing. They are juicy and full of flavor. Funny enough though, I don’t like them fresh that much. While I prefer most fruits and vegetables fresh over the canned ones, I do like canned apricots better. And I like them dried. Both not the best options when it comes to sugar, of course. The canned apricots are happily soaking in sugar syrup and the dried ones are (just like any dried fruit) little sugar bombs. So I try to avoid both (not always succeeding). read more

Risotto was one of those dishes, I had not tried yet. I love a good creamy risotto. And although we’re not strictly on a low carb diet, we try to eat less of those little buggers. Mind you, carbohydrates aren’t bad, it’s just that we eat way too much carbohydrates for our bodies to burn up (and all the excess is stored as fat). Unless you’re an athlete burning thousands of calories a day. Which I am obviously not. So, I have to watch how much I consume. read more

If I have to make a list of my favorite comfort food, apple cake (preferably straight out of the oven) definitely makes it to the top ten. But traditional apple cake or apple pie usually equals carb and sugar heaven, even without an optional mandatory serving of vanilla ice cream and whipped cream.

After a few attempts to make an equally delicious treat, I think I’ve come up with a recipe that will hit all the right spots, even though it’s a healthier version . Taste-wise, there was nothing really wrong with the first attempts. But the results were either too eggy for me (more baked omelet kind of texture) or too dry or too crumbly. I love a good cake. Too bad the best cakes are found in the non-healthy section… loaded with sugar and carbs. I do enjoy them though, just once in a while.

I do try old recipes and swap the sugar for a more healthy ingredient. And I’m happy if I succeed to make a sugar free version that’s tasty, but made with regular flours. I’m not all too keen on swapping regular flours for coconut flour or other low carb substitutes, as the results are often too eggy for me. Not so much the taste, but the texture. read more

I have always loved pasta and rice dishes. I still do. I could eat them every single day. Several times a day. Comforting Italian pasta dishes, spicy Asian rice dishes, there are so many great recipes. But when you’re trying to cut down on your carb intake, those dishes won’t exactly help you with that.

However, there is a great alternative. Cauliflower!

Growing up, I only knew one way to eat cauliflower and it actually made me hate it: cooked to mush and smothered in a floury béchamel sauce. It wasn’t until sometime in my twenties, that I discovered also other ways to eat cauliflower. Raw with a dip, cooked al dente with various spices and sauces, au gratin… And so I learned to appreciate this veg. But never would I have thought that cauliflower, one day, might become one of my favorite vegetables. Yet it just might get there. read more
