Mash the bananas.
Add eggs, oil, milk, vanilla extract and maple syrup and mix well.
Add flour and baking powder and mix well.
Beat the egg whites with a pinch of salt until stiff peaks are formed.
Fold the egg whites gently into the batter and let sit for 10 minutes.
In the meantime, heat up you waffle iron and then bake the waffles according to manufacturer's instructions.
Enjoy hot or cold, plain or with powdered sugar, whipped cream and/or fresh fruits.
This will make 12 large waffles or 24 regular sized ones.
