Greek Chicken Skewers
BBQ Chicken Skewers 'Greek Style'

  • 1 kg chicken breast
  • 1 zucchini
  • 250 g (wild) mushrooms
  • 1 red bell pepper
  • 1 red onion
  • 100 ml olive oil
  • 50 ml freshly squeezed lemon juice
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  1. Cut chicken and vegetables into roughly same-sized pieces.

  2. For the marinade, mix oil, lemon juice, garlic, dried herbs, salt and pepper.

  3. Take two zip lock bags and fill one with the chicken pieces and one with the vegetables.

  4. Pour 2/3 of the marinade into the bag with the chicken and 1/3 into the bag with vegetables.

  5. Press as much air out as possible and close the bags. Kneed the bags to distribute the marinade evenly.

  6. Put the bags in the refrigerator and marinate for at least two hours. If possible, let marinate for 6-8 hours or overnight.

  7. Assemble the skewers: start with a piece of chicken, then alternately add vegetables, chicken etc.

  8. Grill on the BBQ, a griddle or roast in the oven. Cooking times vary depending on the size of the chicken and vegetables (20 minutes on average, make sure the chicken pieces are cooked through).
