Chai Spiced Banana Bread

Ingredients
  • 2 large overripe banana's (or 3 small, net weight ca. 220-240g)
  • 3 large eggs
  • 3 tbsp honey
  • 175 g plain flour*
  • 1 tbsp baking powder
Chai Spice Mix:
  • 1/4 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground fennel seed
  • 1/4 tsp allspice
  • 1/4 tsp ground aniseed
Instructions
  1. Preheat oven to 180°C and line a cake/loaf pan with parchment paper and lightly grease the sides.

  2. Mash the banana's in a large bowl.

  3. Add eggs and honey and mix well.

  4. Add the flour, baking powder and spices and mix until just combined.

  5. Pour batter into prepared pan and bake in the middle of the oven for ca, 25-30 minutes.

Recipe Notes

*You can also use whole wheat or spelt.
