Nectarine Cinnamon Bread Pudding

  • 1 stale baguette or other bread
  • 3 nectarines
  • 6 medium eggs
  • 500 ml milk
  • 1 tsp cinnamon
  • 2-3 tbsp sugar or equivalent sweetener
  1. Preheat oven to 180°C and grease a baking dish.

  2. Cut up the bread. I sliced it, but I will probably dice it next time. Arrange the bread slices in the greased dish.

  3. Cut up the nectarines, prop a few pieces between the bread slices and scatter the rest over the top.

  4. Mix eggs, milk, cinnamon and sugar/sweetener.

  5. Pour the milk-egg-mixture over the bread and nectarines and bake for about 45 minutes.

  6. Serve warm.
