Pumpkin Banana Blondies

  • 3 medium very ripe banana's, mashed (ca. 275 g*)
  • 225 g pumkin puree*
  • 2 eggs
  • 60 ml vegetable oil
  • 2 tsp vanilla extract
  • 100 g ground almonds
  • 100 g oat flour (finely ground oats)**
  • 1 tsp baking powder**
  • 1/2 tsp salt
  • 25 g coconut blossom sugar
  1. Preheat oven to 170°C. Line a 9 x 13" baking dish with parchment paper.

  2. Mix all dry ingredients in a bowl and set aside.

  3. Mix all wet ingredients in a large bowl. Add dry mixture and mix until just combined.

  4. Pour batter into prepared baking dish en bake for 25-30 minutes. A toothpick inserted in the middle should com out clean.

  5. Enjoy as is or frost as desired.

Recipe Notes

* If you have a bit more pumpkin and/or mashed banana, you might need to up the amount of ground almonds or oat flour.

** Use certified gluten free is necessary.
