Triple Chocolate Banana Bread

  • 2 medium (over)ripe bananas
  • 2 eggs
  • 250 ml buttermilk*
  • 1 tsp vanilla extract
  • 2 tbsp honey**
  • 50 ml vegetable oil
  • 100 g dark chocolate (min 70%)
  • 250 g flour
  • 25 g cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 100 g chocolate chips***
  1. Preheat the oven to 180°C (160°C hot air) and grease a cake tin or line with parchment paper.

  2. Melt the chocolate.

  3. Mash up the banana.

  4. Mix the banana with the milk, eggs, oil, vanilla and honey.

  5. Pour a little bit of the mixture into the melted chocolate and stir.

  6. Add the chocolate to the mixture and mix well.

  7. In a separate bowl, mix the flour, cocoa powder, baking soda and baking powder.

  8. Add the wet mixture and mix with a spatula.

  9. Fold in the chocolate chips and pour the batter into the cake tin.

  10. Bake, in the middle of the oven, for ca. 30-40 minutes or until a toothpick inserted in the middle comes out clean.

Recipe Notes

*If you don't have banana milk at hand, you can add vinegar to regular milk (ratio: ca. 1 tablespoon vinegar to 500 ml milk). Let sit 10 minutes until the milk has started to curdle.

**Depending on the ripeness (sweetness) of the bananas you can add more honey if you like.

***As an alternative you can chop up a piece of chocolate.
